It's the middle of January and the temp just dropped to -20 here in NYC. Things that are keeping me warm are blankets, my practice and hearty plant foods. But since we're in the heart of Kapha season, I rarely want to put effort into cooking breakfast. Enter sweet potato toast.
Sweet potatoes are rich with nutrients, plentiful in the good carbs that give you energy without forking up your blood sugar levels. I've topped these with almond butter, warming cinnamon spice, and strawberries to keep it nice and light.
Some topping options are:
Pre-heat oven to 350 degrees.
Slice sweet potatoes lengthwise about 1/4 inch thick.
Place on parchment non-stick baking sheet and cook for 15-20 minutes.
Allow to cool completely.
Place in toaster until the edges are crisp and the middle is starting to bubble. I found that 4-5 minutes does the trick in my toaster oven.
Top with your favorite combination of the above toppings or any other warming nuts/seeds and berries of your choice.
